    hey there

thought i'd give this a bump...

this is a recipe i found online, but ive quickly adopted it, and i do it so much it has become my signature dip :P

    here goes

2 tablespoons extra virgin olive oil
2 large yellow onions (about 1 1/2 pounds), finely chopped
3/4 cup sour cream (low-fat is fine if you like)
3/4 cup Greek yogurt (low-fat is fine if you like)
    3 teaspoons dehydrated onion powder/granulates (salt-free, natural)
    very scant 1/2 teaspoon salt

In a large thick-bottomed skillet over medium heat saute the chopped onions in the olive oil along with a couple pinches of salt. Stir occasionally with a wood or metal spatula and cook until the onions are deeply golden, brown, and caramelized - roughly 40 or 50 minutes (see photo). Set aside and let cool.

In the meantime, whisk together the sour cream, yogurt, onion powder, and salt. The important thing is to add whatever onion powder you are using to taste. Add a bit at a time until it tastes really good. Set aside until the caramelized onions have cooled to room temperature. Stir in 2/3 of the caramelized onions, scoop into a serving bowl, and top with the remaining onions. I think this dip is best at room temperature.

    enjoy : )

Just made this recipe this weekend, a variation on my mom's recipe for Chicken and Dumplings. Found it on the blog thepioneerwoman.com.

In the US, you can buy frozen egg noodles in the freezer section where you would buy bread dough/rolls. You can always make your own, but it's sooo much work...

            Homemade Chicken and Noodles

            time 2 hours total
            yield 6 servings

            category Soups/Stews
            cuisine American

            ingredients
1 whole Cut Up Fryer Chicken
            2 whole Carrots, Diced
            2 stalks Celery, Diced
½ whole Medium Onion, Diced (optional)
            1 teaspoon Salt
            ½ teaspoons Turmeric
¼ teaspoons White Pepper (more To Taste)
            ¼ teaspoons Ground Thyme
            2 teaspoons Parsley Flakes
16 ounces, weight Frozen 'homemade' Egg Noodles
            3 Tablespoons All-purpose Flour

            directions
            1. Cover chicken in 4 quarts water. Bring to a boil, then reduce heat to low. Simmer for 30 minutes.
            2. Remove chicken from pot with a slotted spoon. With two forks, remove as much meat from the bones as you can, slightly shredding meat in the process. Return bones to broth and simmer on low, covered, for 45 minutes.
            3. Remove bones from broth with a slotted spoon, making sure to get any small bones that might have detached.
            4. Add the carrots and celery (and onions, if using) to the pot, followed by the herbs and spices. Stir to combine and simmer for ten minutes to meld flavors.
            5. Increase heat and add frozen egg noodles and chicken. Cook for 8 to 10 minutes.
            6. Mix flour and a little water. Stir until smooth. Pour into soup, stir to combine, and simmer for another 5 minutes, or until broth thickens a bit. Test and adjust seasonings as needed.

              Melt 1/2 stick of butter
              8 oz cream cheese
              3 tsps of garlic salt

                My fave easy recipe.

One box vanilla cake mix...(just the mix...none of the called for ingredients)
1 16 ounce can of pumpkin
                1 bag chocolate chips...

Drop on ungreased cookie sheet...they won't spread...

Mix and bake at 350 for 12-15 minutes..

                To make even better...

                Frost with Creamed Cheese Frosting...

                IN a mixer blend...

                1 stick butter
                2 cups powdered sugar
                2 tsp vanilla
1 big package of cream cheese.

                Soooo yummy.
