I haven't left Singapore Airport but it's really close to the centre of town (Singapore is tiny after all). Given that your stopover is only ~5 hours, I wouldn't risk it. You need to consider that you will have to go through security again when you go back into the airport.
With that said, I have to transit through Singapore whenever I fly to see my GF and there is plenty there to entertain you. The duty-free shopping is very diverse and they have some indoor forests that have to be seen to be believed.
(If you're planning on buying duty-free alcohol I would also buy it in Singapore as Australia has a silly rule that means that you have to buy it at the last stopover before you enter Australia. It's quite a bit cheaper than in Australia as well.)
